The holy night of Shab-e-Barat is almost incomplete if we do not indulge ourselves in some halwa. But as sad as it sounds, the tradition of making halwa is slowly turning into a lost art but. But worry not, we bring you a simple DIY guide to making the finest Gajar halwa. Give your loved ones a pleasant surprise and turn tonight into a sweet occassion!
Ingredients:
- Carrot (grated) 1500g
- Sugar 200 g
- Milk 300 mL
- Cashew nut (chopped) 25 g
- Almond (chopped) 25 g
- Ghee 2-3 tbsp
Method:
- Heat the ghee in a non-stick pan in medium heat and add the grated carrots. Mix the carrot with the ghee using a spatula.
- Keep stirring for 20-25 minutes in a medium flame.
- Increase the flame to high once the carrot is fully cooked for 8-10 minutes, keep stirring.
- Reduce the flame to medium, and add the milk while mixing properly.
- Cover the pan and cook it for 20 minutes while stirring in between.
- Next add the sugar and the nuts and mix well.
- Cover the pan and keep cooking it for 10-15 minutes on low flame, keep stirring in between.
- Increase the flame and stir for 2-3 minutes.
- Turn off the flame and serve in a dish.
- Garnish with nuts.
