Le Meridien guides you to making some delightful Om Ali

We are all familiar with dessert marvels of the Western world but did you know that the East to has various wonders to offer? Om Ali is one such a dish and Le Meridien junior sous chefs, Ricardo Costa and Monoranjan Sarkar will aid you to nail it on your first attempt!

Om Ali
For 10 portions
1000 ml milk
400 gm puff pastry
400 gm whipping cream
160 gm sugar
100 gm raisin
100 gm pistachio
100 gm almond (sliced)

Preparation
Preheat oven to 150 C degrees. Place the large sheet of puff pastry sheet on an oven tray. Bake for 25 minutes or until crisp and brown. Remove from the oven and raise the oven temperature to 240 C degrees. Butter the baking dish. Crumple the pastry into a baking dish, scatter the raisins, fruit, and nuts in between layers in a saucepan.

Bring the milk, cream, and sugar to the boil. Pour this over the pastry. Sprinkle with cinnamon, flaked almonds, and ground pistachios. Place dish in the oven for 20 minutes or until the top is browned. Serve hot.
