Follow Chef Gregory’s simple recipe to make this palate pleasing Herb Crusted Rack of Lamb dish

Chef Gregory Gomes from The Way Dhaka, brings to your table a dish you can’t help but drool over. From baking to garnishing, here is the step by step procedure of creating your very own Herb crusted rack of lamb. 

Herb Crusted Rack of Lamb

Serves 1


250 gm rack of lamb
2 tbsp olive oil

For crust

1 pc sliced bread (cut into 4 cubes)
1 sprig parsley
1 sprig thyme
1 sprig coriander
1 sprig rosemary
2 tbsp English mustard
Splash of olive oil

For Sauce

100 ml lamb stock
Fresh mint leaves
Pinch of ground black pepper
Salt to taste
Splash of cream


Mix all the ingredients and coat the rack of lamb.

Oven bake for 25 to 30 minutes. For the sauce, mix spices, mint leaves and stock. Let it simmer; add cream when thickened. Garnish with sweet corn, baby carrots, caramelised onions and wild mushrooms.
